Yummy But Healthy Yuletide Breakfasts

Christmas is the perfect time to forget the diet and indulge in a little bit of what you fancy, particularly if you’re treating yourself to a night away from home in a B&B. Try adding one of these recipes to your breakfast menu and your guests won’t be able to resist indulging in a sweet, warm and wintry breakfast treat. You can reassure those fussy guests though, because all the bed and breakfast recipes here are as healthy as they are delicious!

And as perfect as they might be for guests, we haven’t left you B&B owners far from our thoughts – they’re also simple to get right and quick to make!

Cinnamon Apple Muffins

Ingredients
1½ cups flour
¾ cup sugar
1 ½ tsp. Baking powder
1 tbsp. Cinnamon
½ cup milk
⅓ cup melted butter
1 egg, slightly beaten
1 cup finely chopped apples

Directions
Preheat the oven to gas mark 5 (375°F), then combine the flour, sugar, baking powder and cinnamon in a medium sized bowl. After they have been mixed, add all of the other ingredients and stir until the flour is just moistened. Then spoon the mixture into muffin liners and bake for 20 minutes.

Croissants with berry vanilla compote

Ingredients
350g mixed frozen berries
½ cup brown sugar
1 ½ teaspoons vanilla extract
8-12 croissants

Directions
Place the frozen berries, brown sugar and vanilla extract in a pan and warm over a medium heat. Cook for 10 minutes, or until the mixture has thickened and then leave to one side. Whilst the compote cools down, heat the croissants for five minutes at a low heat. Serve the croissants warm, with the slightly cooled compote on the side.

Winter fruit medley

Ingredients
8 ripe pears, peeled
1 vanilla pod, seeds scraped
6 tbsp honey
1 cinnamon stick
4 cloves
Pared zest of 1 orange
Pared zest of 1 lemon, plus a good squeeze of juice
8 large handfuls of dried fruit (e.g. apricots, figs, prunes, apples)
100ml elderflower cordial

Directions
Put the pears in a large pan and cover with water. Add the vanilla pod and seeds, honey, cinnamon, cloves, fruit zest and lemon juice then bring to a simmer, cover and cook for 10 minutes until the pears are just cooked. Pour half of the syrup into a bowl and add the dried fruit and cordial. Leave everything overnight (with the pears in the other half of the syrup). In the morning half the pears, combine everything in a large bowl and then serve with Greek yoghurt.

Ginger fruit dip

Ingredients
3 oz instant vanilla pudding mix
1-1/2 cup milk
6 oz orange juice concentrate
1/3 cup sour cream
1/4 tsp. ground ginger
1 tbsp. candied ginger, finely chopped
1/2 cup heavy whipping cream
2 tbsp. sugar

Directions
Whisk the pudding mix, milk and orange juice concentrate for 1 minute. Stir in the sour cream and ginger. In another bowl, mix the cream and sugar and beat until peaks form. Combine with the ginger mixture and chill for a few hours before serving. Cut up slices of fruit for dipping, such as mandarin orange segments, pear slices, strawberries, grapes, and kiwi fruit.
