More Christmas Breakfast Recipes

As December 25th approaches, B&B owners with Christmas guests will be planning special bed and breakfast recipes for the all-important day. Don’t keep bed and breakfast menus run of the mill at this time of year – Christmas is all about indulging your customers (and yourself)!

These tasty bed and breakfast recipes aren’t as simple as we usually try and keep the cooking tips, but we couldn’t resist sharing them because for us they sing out ‘holiday’!

Christmas Bread

Ingredients:
1/2 cup sugar
3 1/2 cup flour
1/2 tsp. salt
2 oz butter
2 pack yeast
2/3 cup water
1 egg

For the filling:
8 oz cream cheese
8 oz cottage cheese
1/2 cup sugar
1 tsp. grated lemon peel
1 egg yolk
1/2 cup raisins

Directions
In a large bowl, mix the sugar, yeast & 1 cup flour. Separately, heat the butter and water. Add this to the bowl and mix for about two minutes. Next add the egg and 3/4 cup flour. Beat for two more minutes. Stir in a further 1/4 cup flour.  Now knead the mixture for eight minutes, adding 1/2 cup flour whilst you mix. Let it rise to double and rest for 15 minutes, then shape into a rectangle approx. 15×12. Scoop the filling (which you have blended and chilled when the dough is rising) down the center. On either side cut 1″ strips and crisscross over the top. Let it rise till double again. Brush with egg white for a glazed finish and bake at 350 for 20 minutes. The cake could be the main ingredient of bed and breakfast menus, or an accompaniment to other dishes over the holiday season.

Christmas French Toast

Ingredients
1/2 loaf of French bread, cut diagonally in 1 inch slices, or white sliced bread
4 eggs
1 cup milk
3/4 cup half-and-half (milk and cream)
1/4 cup and 2 tablespoons butter
2/3 cup brown sugar
1/8 tsp. ground cinnamon
1 tsp. vanilla extract
1 tblsp. and 1-1/2 tsp. light corn syrup (or golden syrup)

Directions
This bed and breakfast recipe can is great for lots of guests as it is prepared the evening before. First, butter a 9×13 inch baking dish and arrange the slices of bread in the bottom. In a large bowl, beat together the eggs, milk, cream, vanilla and cinnamon. Pour over the bread slices, cover, and refrigerate overnight. In the morning, preheat the oven to 350F (180C, Gas Mark 4). In a small saucepan, combine the butter, brown sugar and syrup and heat until bubbling. Pour over the bread and egg mixture. Bake in the preheated oven, uncovered, for 40 minutes.

Christmas Muffins

Ingredients
6 oz fresh cranberries
2 oz icing sugar
5 oz flour, plain wholemeal
5 oz flour, plain white
1 tbsp. baking powder
1 tsp. mixed spice
1/2 tsp. salt
2 oz sugar, light brown
1 egg
8 fl oz milk
2 fl oz vegetable oil

Directions
This is one of those bed and breakfast menus you know all the guests will enjoy, including the kids and the awkward one on a diet – there are only 175 calories per muffin. First mix the icing sugar with the halved cranberries. Take a twelve cup muffin tin and grease with butter or use paper cases. In a bowl, mix the brown sugar, salt, mixed spice, baking powder and both flours. Make a hole in the middle to add a mixture of beaten egg, milk and oil. Blend, then add the cranberries and quickly stir. The end product should be a rough mixture with lumps and air pockets visible. Bake at 350 F (180 C, gas mark 4) for 20 minutes until golden brown.
