5 Ways to Spice Up Your B&B Breakfast
Summer’s on the way here in the UK (or at least we hope it is…) and, to celebrate, here are five fun B&B recipes to spice up a classic full English breakfast with some summer heat!
1. Spice Up Your Eggs
Turn bland scrambled eggs into a spicy delight with this simple Mexican fusion recipe… (serves 2)
1 cup chopped tomatoes
1/2 red onion
Crushed garlic
Diced jalapeño peppers (to taste)
4 large eggs
1 tbsp milk
salt and pepper
With a little oil, fry the garlic, onion, tomatoes and jalapeño peppers until soft. Whisk the eggs, milk, salt and pepper in a bowl, then add the the frying pan with a dash of extra oil.
2. Spice Up Your Beans
Jazz up canned baked beans with a curry twist:
1 tin baked beans
2 cloves garlic, crushed
1/2 medium onion, chopped
1 cup halved cherry tomatoes
1 tsp ginger
1 tsp cumin
1 tsp tumeric
fresh coriander, chopped
Fry the garlic, onion and tomatoes in butter until soft, then add the canned beans with the herbs and sp
ices. Stir over a medium heat until the sauce has thickened slightly, but be careful not to boil the liquid.
3. Spice Up Your Toast
Forget boring strawberry jams – ginger spiced honey is the new preserve!
(serves 4)
8 slices wholemeal bread
4 tbsp honey
1 tsp ground ginger
Toast the bread and spread lightly with butter. Heat the honey gently in a saucepan and stir in the ginger when soft. Drizzle over the buttered toast.
4. Spice Up Your Bacon
Turn salty into spicy with this hot way to cook bacon…
3 bacon rashers
1 chopped jalapeño pepper
1 tsp cayenne pepper
Sprinkle cayenne pepper on both sides of the bacon, then fry it together with the peppers in hot oil so that the meat absorbs the spicy flavour. Serve by itself or with the jalapeños as a garnish.
5. Spice Up with Salsa
This fresh tomato salsa recipe can be added to scrambled eggs and beans or as an interesting alternative to grilled tomatoes in your full English. (adapted from Reluctant Gourmet)
6 cups chopped fresh tomatoes
2 scallions, minced
1 cup fresh cilantro, chopped
6 cloves of garlic, minced
2 tbsp chopped jalapeño peppers1/2 cup fresh oregano, chopped
2 yellow bell peppers, chopped
1/4 cup olive oil
3 tbsp fresh lime juice
salt and pepper
To save time, you can put the uncut ingredients in a food processor but if you chop by hand you’ll end up with a more satisfying texture and homemade taste. Once prepared, add all the ingredients to a large bowl and stir well. Put in the fridge (covered) for an hour before serving.
