Blueberry Smoothies
Make a change from the usual orange juice with fresh and easy to make smoothies. With spring approaching in the UK, more fresh fruit can be found on supermarket shelves and blueberries are the perfect combination of healthy and sweet.
Ingredients: makes 2
1/2 cup blueberries
1 teaspoon chopped mint
2 teaspoon honey
2 cups milk
Whipped cream
Fresh mint leaves for decorating
Directions
Put all ingredients in a blender and whisk for about 30 seconds until thick and creamy. Serve garnished with whipped cream and a fresh mint leaf – simple!
Cranberry Pancakes
Add a tangy twist to a traditional recipe with cranberries in a healthy pancake mix!
Ingredients: serves 2
1/2 cup fresh cranberries
1/4 cup all-purpose flour
2 cup whole-wheat flour
1 tablespoon yellow cornmeal
1 tablespoon sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon vanilla extract
6 tablespoon milk
2 eggs, beaten
1 1/2 teaspoon walnut or canola oil
Directions
Bring 2 inches of water to a boil in a small saucepan and add the cranberries, then boil for 2 minutes. Drain and cool. Meanwhile, whisk the flour, cornmeal, sugar, baking powder and salt in a large bowl. Whisk the milk, eggs, oil and vanilla in a second small bowl until combined.
Coarsely chop the cranberries and stir into the milk mixture. Then stir the milk mixture into the dry ingredients.
Heat oil or butter over a medium heat and using 1/4 cup of batter for each pancake, cook 2 pancakes at a time until bubbles dot the surface or for 2 to 3 minutes. Flip and continue cooking until browned for 1 to 2 minutes more. Repeat with the remaining batter.
Watermelon Agua Fresca
This refreshing Mexican drink has a quick of sweet and cool to start the day. Serve with a tray of muffins or pastries for a suitably light spring breakfast selection.
Ingredients: serves 6
8 cups cubed seeded watermelon
1 cup water
1/3 cup sugar
1/4 cup fresh lime juice
1 club soda, well chilled
Lime slices for garnish
Directions
Combine half the watermelon, half the water and half the sugar in a blender and puree. Pour through a coarse strainer into a large container. Repeat with the remaining watermelon, water and sugar. Stir in the lime juice. Refrigerate until well chilled – usually about 4 hours.
To serve, stir in the club soda to the fruit mixture and garnish with lime.
